Today in the workshop, we produce a full 200 knives a year. No more, no less. For our one-off productions, we would like to limit ourselves to 200 blades per year, to ensure that each piece is carefully monitored and given sufficient attention. We are committed to a sustainable approach, which we feel is incompatible with high-volume, artisanal production. In addition to the first 200 pieces, we also produce semi-industrial models for our professional customers who may have precise specifications, a need for volume and similarity between each finished piece.
